Creamy Mushroom Risotto

Ingredients
- 1½ cups arborio rice
- 2 cups sliced cremini mushrooms (see ingredient)
- 4 cups vegetable broth
- ½ cup grated parmesan (see ingredient)
- 2 tbsp butter
- 1 small onion, finely chopped
Instructions
- Sauté onion and mushrooms in butter until softened.
- Add rice and toast for 1–2 minutes.
- Gradually add warm broth, stirring until absorbed each time.
- Stir in parmesan, season, and serve immediately.
